 Pumpkin Stuffed Wtih Wildrice
Stuffed Pumpkin

Ingredients: 
1 pumpkin
1 cup wildrice
2 table spoon olive oil
2 cups spinach
1/2 cup bread crumbs
1 teaspoon salt
dash of pepper seeds,
1/2 cup parmesan cheese.


Slice pumpkin in 1/2 core out pumpkin with a spoon, discard seed but keep pumpkin for filling. In a skillet heat olive oil the add pumpkin . Add onion pepper dash of salt and pepper, add cooked rice spinach and some parmesan cheese.
Cook for 7 min.  Fill pumpkin half with rice filling top with bread crumbs and parmesan cheese, bake in oven for 40 min until pumpkin is soft.  Serve in pumpkin half.
